Today we share a recipe for a traditional treat made mainly in Mani, called koutalides, by the owners of Yiayias Delights, based in London.
You will need:
-2 cups all purpose flour
-1 1/5 cup water
-1 pinch salt
-1 pinch sugar
-zest from half lemon
-olive or vegetable oil for frying
We add the flour, sugar, salt and zest on a mixing bowl. We slowly add water and we stir well till our blend become thickened. We pour approx 2cm deep oil in the pan, also keep on the side a plate with a paper towel to absorb the oil from koutalides before you serve. When the oil is hot enough at around 170 degrees we take a table spoon and we pour the blend in the oil. We fry them from both sides till perfect golden, when they are ready with a skimmer we take them out of the oil and we place them on the plate with the paper towel for 1 minute.
And they are ready to serve!
You can use whatever you like for topping really but the most common is honey and cinnamon.
