It’s summertime during a hot August with dry etesian winds (meltemi) on the island of Serifos. You spend your day going from one beach to another so you can manage to see and enjoy all of the island’s beauties. There are many gems, indeed. The evening though, requires that you enjoy it at the main Town, for many being the most beautiful town in the Cyclades. So you go uphill early, at about 19.00, tο make the most out of the light-blue sky sitting on some rooftop and bask in the changing of the colors as it meets King Sun. Such an inspired day, calls you to indulge yourself with a sweet tasting rum and accompanied by the gorgeous view, while the saltiness of the sea reaches you as the wind blows your white linen shirt or dress.
This evening’s choice is Gaidaros (The Donkey) cocktail bar. A new fresh recommendation on the island, in its second year of operation. Located almost at the entrance of the Castle in the Upper Main Town and a little bit further up from the traditional bakery, it waits for you to come try some of its cocktails on the stoop. Before that though, you should go up the rooftop and savor a glass of the aged rum Diplomatico Reserva Exclusiva, with views of Sifnos island and Agios Sostis beach on your left, and the islet Vous just across. The aromas of orange peels and the caramel flavor of the Diplomatico rum merge with the colors of the nightfall, thus calling it a wonderful day at one of the most beautiful and authentic islands of the country, Serifos.
The ideal flavor pairing to balance out the sweet finish of the aged rum is capers, grown everywhere on the island and can be found under every single step you take. Its savory taste when combined with moschotyri cheese of Serifos, will complement the sweet notes that define Diplomatico, and will amaze you. Locals forage capers during May and store it in glass jars with vinegar and salt, serving it as a dressing blend it with pretty much all of their salads. If you stumble upon caper leaves too, well, you should feel extremely lucky. Enjoy!
